(vegan, plant-based protein, dairy-free, gluten-free, refined sugar-free)

Ingredients
1 cup vegetable broth
1 medium diced yellow onion
1 cup diced carrots
1 large can tomato purée
1 cup steamed kale
1 can each rinsed black beans, navy beans and red kidney beans
Pinch of cumin, garlic powder, salt, pepper & nutritional yeast
Directions (serves 3-4)
In a large pot, sautée the onion and spices in olive oil
Add in carrots. While that cooks in the pot, fill a bowl with the kale and a little bit of water to steam in the microwave for about 2 minutes
Add the steamed kale to the pot along with the tomato purée
Let this cook for 3 minutes then add in the canned beans and vegetable broth
Cover and simmer over medium-low heat for about 40 minutes until most of the liquid has absorbed
Top with cheddar shreds & enjoy :)
