Spring Arugula Salad with Roasted Almonds

(gluten-free, refined sugar-free, vegan-option)



1 bag of arugula

Handful cherry tomatoes, halved

Handful of unsalted, roasted almonds

Sprinkle of goat cheese (optional)

½ cucumber, sliced

Drizzle of olive oil

Juice of 1/2 lemon

Sprinkle sea salt

Ingredients (serves 3-4)

  1. In a large bowl, add arugula, diced cucumber, cherry tomatoes, goat cheese and almonds

  2. Drizzle olive oil and squeeze lemon juice over top

  3. Sprinkle sea salt on top and toss to combine. Serve!
