Maple Pumpkin Spice Oatmeal

(dairy-free, vegan-option, refined sugar-free)



1/2 cup rolled oats

1/2 cup almond milk

2 egg whites (optional)

1 tbsp chia seeds

1/3 cup pumpkin puree

1/2 tsp maca powder

1 tsp pumpkin spice

2 tsp maple syrup

Toppings: handful of pumpkin seeds & 2 tbsp peanut butter

Directions (serves 1)

  1. Combine oats and almond milk in a bowl and microwave for 1:00

  2. Remove, stir and fold in the egg whites

  3. Stir in 2 egg whites and microwave for another 1:30 until egg whites are cooked through.

  4. Stir in the pumpkin puree, pumpkin spice, chia seeds and maca powder. If too thick, add in 1-2 tsp almond milk

  5. Finish off the bowl with a drizzle of maple syrup and top with pumpkin seeds and peanut butter
