Creamy Spinach Pasta

(vegan, plant-based protein, dairy-free, refined sugar-free)



1 serving of rotini pasta (I use plant-based, chickpea protein pasta from Chickapea Pasta)

1/2 avocado

2 tbsp lemon juice

Salt & pepper to taste

1 tsp dill

1 tbsp basil

2 tbsp tahini

Handful of chopped spinach

Directions (serves 1)

  1. Fill a pot with water and bring to a boil. Add in the rotini

  2. After a few minutes, add in the spinach. Once done boiling, drain and put the pasta and spinach in a large bowl

  3. In a separate bowl, mash together 1/2 avocado, lemon juice, salt, pepper, dill, basil and tahini until smooth

  4. Combine the mixture with the spinach and pasta in the large bowl and serve
