(vegan, plant-based protein, dairy-free, refined sugar-free)

Ingredients
1 serving of rotini pasta (I use plant-based, chickpea protein pasta from Chickapea Pasta)
1/2 avocado
2 tbsp lemon juice
Salt & pepper to taste
1 tsp dill
1 tbsp basil
2 tbsp tahini
Handful of chopped spinach
Directions (serves 1)
Fill a pot with water and bring to a boil. Add in the rotini
After a few minutes, add in the spinach. Once done boiling, drain and put the pasta and spinach in a large bowl
In a separate bowl, mash together 1/2 avocado, lemon juice, salt, pepper, dill, basil and tahini until smooth
Combine the mixture with the spinach and pasta in the large bowl and serve
