(gluten-free, dairy-free, vegan, refined sugar-free)

Ingredients
1 large sweet potato
Drizzle of olive oil
1 tbsp cinnamon
1 tsp coconut sugar
2 tbsp almond butter
Drizzle of honey
Directions (serves 1)
Chop sweet potato into ~1 inch cubes
In a large bowl, combine cinnamon and coconut sugar
Coat sweet potato cubes in a drizzle of olive and roll into cinnamon sugar mixture
Air fry cubes at 400F for 8 mins
Let cubes cool for several minutes and drizzle in almond butter and honey as a topping
Serve!
