Cinnamon Dusted Sweet Potato Poppers

(gluten-free, dairy-free, vegan, refined sugar-free)

 


 

Ingredients

1 large sweet potato

Drizzle of olive oil

1 tbsp cinnamon

1 tsp coconut sugar

2 tbsp almond butter

Drizzle of honey


Directions (serves 1)

  1. Chop sweet potato into ~1 inch cubes

  2. In a large bowl, combine cinnamon and coconut sugar

  3. Coat sweet potato cubes in a drizzle of olive and roll into cinnamon sugar mixture

  4. Air fry cubes at 400F for 8 mins

  5. Let cubes cool for several minutes and drizzle in almond butter and honey as a topping

  6. Serve!
