Cinnamon Apple Pumpkin Oatmeal

(dairy-free, vegan-option, refined sugar-free)



1/2 cup rolled oats

1/2 cup almond milk

2 egg whites (optional)

2 tbsp chia seeds

1/3 cup pumpkin purée

1 tsp cinnamon + 1 tbsp (for apples)

1/4 tsp ginger powder

1 tsp vanilla

Toppings: warm cinnamon apples and 2 tbsp peanut butter

Directions (serves 1)

  1. Combine oats and almond milk in a bowl and microwave for 1:00

  2. Stir in 2 egg whites and microwave for another 1:30 until egg whites are cooked through.

  3. Add in the pumpkin puree, cinnamon, ginger and chia seeds.

  4. Microwave for another :30. Let the oats cool while preparing the cinnamon apples

  5. Chop up half of a honey crisp apple into 1-2 inch thick cubes

  6. Place cubes in a bowl and coat with 1 tbsp of cinnamon

  7. Microwave for :45

  8. Top oatmeal bowl with warm cinnamon apples and 2 tbsp peanut butter
