Chocolate Chip Black Bean Brownie Cups

(gluten-free, dairy-free, vegan)




1 can black beans

1/2 cup rolled oats

1/4 cup maple syrup

1/4 cup almond butter

1/4 cup cacao powder

1 tsp vanilla extract

1/2 cup dark chocolate chips

Pinch of pink Himalayan salt


  1. Preheat oven to 350 F

  2. Combine black beans, rolled oats, maple syrup, almond butter, cacao powder, vanilla extract and salt in a food processor

  3. Pour batter into lined muffin tray

  4. Sprinkle chocolate chips over top

  5. Bake for 15-17 minutes

  6. Let brownies cool for 15 mins and enjoy!
