Caramelized Banana Oatmeal

(dairy-free, vegan-option, refined sugar-free)



1/2 cup rolled oats

1/2 cup almond milk

1 tsp cinnamon

1 tsp maca powder

2 egg whites (optional)

1 tsp coconut sugar

1 tsp vanilla

Toppings: Caramelized banana, 1 tsp cacao nibs, 2 tsp date syrup drizzle and 1 tbsp almond butter

Directions (serves 1)

  1. Combine oats and almond milk in a bowl and microwave for 1:00

  2. Stir in 2 egg whites and microwave for another 1:30 until egg whites are cooked through.

  3. Stir in the cinnamon, maca powder, coconut sugar and vanilla. Let the oats sit while preparing the caramelized banana

  4. Slice up the banana into 1 inch thick coins and sautée for 2-5 minutes on each side in a lightly sprayed pan

  5. Layer the caramelized bananas over the oats and top with 1 tbsp raw almond butter, 1 tsp cacao nibs and 2 tsp date syrup
