(dairy-free, vegan-option, refined sugar-free)

Ingredients
1/2 cup rolled oats
1/2 cup almond milk
1 tsp cinnamon
1 tsp maca powder
2 egg whites (optional)
1 tsp coconut sugar
1 tsp vanilla
Toppings: Caramelized banana, 1 tsp cacao nibs, 2 tsp date syrup drizzle and 1 tbsp almond butter
Directions (serves 1)
Combine oats and almond milk in a bowl and microwave for 1:00
Stir in 2 egg whites and microwave for another 1:30 until egg whites are cooked through.
Stir in the cinnamon, maca powder, coconut sugar and vanilla. Let the oats sit while preparing the caramelized banana
Slice up the banana into 1 inch thick coins and sautée for 2-5 minutes on each side in a lightly sprayed pan
Layer the caramelized bananas over the oats and top with 1 tbsp raw almond butter, 1 tsp cacao nibs and 2 tsp date syrup
