Caprese Toast

(dairy-free, vegan option, refined sugar-free)

 
 

Ingredients

2 slices of whole wheat bread

1 egg (optional)

1 tbsp hummus

1 tbsp pesto

Drizzle of olive oil

Sliced cherry tomatoes

Fresh basil leaves

Salt & red pepper flakes to taste


Directions (serves 1)

  1. Toast 2 pieces of bread and slice your cherry tomatoes

  2. Smear the pesto on both slices and then layer with the hummus

  3. Place the halved tomatoes on top of the hummus layer, season with salt, red pepper flakes and garnish with basil leaves
