Blueberry Cacao Oatmeal

(dairy-free, vegan-option, refined sugar-free)



1/2 cup rolled oats

1/2 cup unsweetened almond milk

1 tsp cinnamon

2 egg whites (optional)

1 tbsp chia seeds

1 tsp cacao powder

Toppings: handful of frozen blueberries and 1 tsp cacao nibs

Directions (serves 1)

  1. Combine oats and almond milk in a bowl and microwave for 1:00

  2. Stir in 2 egg whites and microwave for another 1:30 until egg whites are cooked through.

  3. Stir in the cinnamon, chia seeds and cacao powder. If too thick, add in 1-2 tsp almond milk

  4. Top the oatmeal bowl with frozen blueberries and cacao nibs
