Avocado & Za'atar Egg Toast

(refined sugar-free, dairy-free)

 

 

Ingredients

2 slices of whole wheat bread

1/2 avocado

2 whole eggs

2 tbsp za’atar

Salt & red pepper flakes to taste


Directions (serves 1)

  1. Drizzle light olive oil in a pan and crack in two eggs

  2. Sprinkle the za’atar over the eggs as they cook and flip (I prefer over easy)

  3. Toast 2 pieces of bread and mash ½ an avocado between both pieces

  4. Layer the cooked eggs over the mashed avocado and finish off with salt and red pepper flakes
