Avocado & Pesto Eggs Toast

(dairy-free, refined sugar-free)

 

Ingredients

2 slices of whole wheat bread

1/2 avocado

2 whole eggs

2 tbsp pesto

Drizzle of olive oil

Salt & red pepper flakes to taste


Directions (serves 1)

  1. Drizzle light olive oil in a pan and spoon on the pesto

  2. Crack both eggs in the pesto and olive oil mixture and cook to your liking (I prefer over easy)

  3. Toast 2 pieces of bread and mash ½ an avocado between both pieces

  4. Layer the cooked eggs over the mashed avocado and drizzle the remaining pesto mixture on top
