Arugula Salad with Roasted Chickpeas & Crumbled Feta

(gluten-free, plant-based protein, refined sugar-free, vegan-option)



1 bag of arugula

1 can chickpeas

Handful of sundried tomatoes

Sprinkle of feta cheese (optional)

Drizzle of olive oil

Juice of 1 lime

Sprinkle sea salt, dill & black pepper

Directions (serves 3-4)

  1. Preheat oven to 400 degrees

  2. Drain and rinse chickpeas. Toss with olive oil, salt and pepper in a large bowl

  3. Place chickpeas on a baking sheet and bake for 15 mins or until desired crispiness

  4. In a large bowl, add arugula, roasted chickpeas, sun dried tomatoes, and feta cheese

  5. Drizzle olive oil and squeeze lime juice over top

  6. Sprinkle sea salt, dill and black pepper on top, toss to combine. Serve!
