Almond Butter & Raspberry Stuffed French Toast

(dairy-free, refined sugar-free)



2 slices of whole wheat bread

1 whole egg & 1 egg white

Dash of cinnamon

1 tsp vanilla

2 tbsp almond milk

2 tbsp almond butter

Handful of raspberries

Topped with almond butter drizzle

Directions (serves 1)

  1. In a bowl, combine 1 egg, 1 egg white, cinnamon, vanilla & a splash of almond milk

  2. Get 2 pieces of bread and sprinkle cinnamon on both sides (pro tip!)

  3. Smear almond butter on one piece and smash the raspberries on the other piece. 4.Sandwich together as if making a PBJ

  4. Place the sandwich in the egg mixture and let this soak on each side for about 1 minute until the sandwich is coated

  5. Fry in a pan for a few minutes on each side until the sandwich has a golden brown crust

  6. Add your toppings and voila!
